Spaghetti alla Norma
To make and then experience this delicious mouth-watering pasta for 4
YOU WILL NEED: an eggplant – an onion – a clove of garlic – 4 ripe tomatoes – aged pecorino cheese – olive oil salt and pepper – and last but not least basil
+ for those who aren’t afraid of those extra calories one mozzarella
Half an hour before getting ready to start cut the eggplant into round slices and put them on a plate and cover them with salt to let water drain out of them.
In the meantime you can chop the onion thinly, wash the tomatoes and dice them in large pieces and grate the pecorino cheese as you would with Parmesan.
Once the eggplant slices have drained rinse them under running water so to wash away all the salt then cut them into dices just as you did with the tomatoes.
Start simmering in a large pan with a table spoon olive oil the chopped onion with the clove of garlic and once it’s nicely softened add the eggplant to the onions and after a few minutes add the tomatoes too.
Cook at medium heat for at least 20 minutes and in the meantime bring water to boil, add salt and the pasta you feel like eating, I usually prefer spaghetti.
Once the spaghetti are cooked, strain them and add them to the sauce in the pan letting them simmer for a few minutes at low flame, stir in the grated pecorino, pour them in a serving tray and top with basil leafs for decoration.
If you feel incredibly thin, or you think you will burn the extra calories add diced mozzarella and and let it melt into your mouth!
