Lunch at Pyramid Bistro – Aspen

While driving to through Aspen to reach our hotel in Snowmass we decided to stop by at the Pyramid Bistro on Main Street. From most of the reviews we had read so far this was the number one lunch spot. The location is rather unusual, I had never seen something quite like it, inside a victorian building lies a book shop ( Explore Booksellers) and on top of it the restaurant. (Adding geek chic to the venue, more chic than geek).
The restaurant itself is really cute, with lots of natural light coming into the main room and also an outside door terrace. All the food provided is organic and locally sourced. It had a wide array of Vegan, raw and Gluten free dishes. It basically has delicious things for all types of foodies.
I settled for the: Whipped avalanche goat cheese arugula, fennel, pistachios, orange tarragon vinaigrette which was a delicious as it sounds! My friends had the Mahi mahi taco shredded cabbage salad, lime vinaigrette, chipotle creme and the Quinoa and a kale salad.
The overall meal was divine, a definite must go to place. For a guilt free lunch!
After the lunch we indulged in to the bookstore and walked around a couple of blocks before heading to snow mass
